Gordon Ramsay's chocolate mousse recipe IngredientsTwo large ripe avocados, peeled and stoned
Three to four tbsp runny honey, to taste
One tsp vanilla extract
50g raw cacao powder
InstructionsStart by placing ripe avocados into a food processor and blend them until you achieve a smooth consistency.
Next, incorporate three tablespoons of honey along with vanilla extract and cacao powder, blending the mixture again until all ingredients are well combined.
Taste the mousse and adjust the sweetness by adding more honey if desired. Once you've achieved the perfect flavour, transfer the mousse into eight shot glasses or small dessert cups.
Refrigerate for about an hour to allow it to set.
For easier measuring of sticky honey, coat your measuring spoon with a light layer of flavourless oil, like groundnut oil, to ensure you get every drop into your mixture. Serve chilled.
