Diwali is not just a festival of lights but also a celebration steeped in tradition and culture. One such tradition, especially in Uttar Pradesh, is to buy Jimikand (also known as Suran or Elephant Foot Yam) on the day of Lakshmi Puja and prepare a special sabzi to be enjoyed after the rituals. This dish is not only tasty but also rich in nutrients and considered auspicious during Diwali.
Ingredients:-
200 grams Jimikand (Suran)

2 tomatoes

½ teaspoon mustard seeds

2-3 green chilies
-
Coriander leaves for garnish

Oil for tempering

½ teaspoon turmeric powder
-
½ teaspoon red chili powder
-
½ teaspoon coriander powder
-
¼ teaspoon garam masala
-
Salt to taste
Peel and wash the Jimikand well. Cut it into medium-sized pieces.
Boil the Jimikand lightly in a pressure cooker until it softens but avoid overcooking.
Soak tomatoes in hot water, peel them, and blend into a puree.
Heat oil in a pan, fry the boiled Jimikand pieces until golden brown for a crisp texture outside while keeping the inside soft.
In the remaining oil, add mustard seeds and let them crackle. Add chopped green chilies.
Add the tomato puree, turmeric, chili powder, coriander powder, salt, and garam masala. Add a little water and cook on medium flame till oil separates.
Add the fried Jimikand pieces, mix well, cover and cook until fully done.
Garnish with fresh coriander leaves and serve hot.
